Ingredients:
- 1 medium zucchini, julienned or spiraled
- 2 large carrots, julienned or spiraled
- 1 red pepper, thinly sliced
- 2 cups thinly sliced red cabbage
- 1 cup frozen edamame, thawed (*not Paleo)
- 3 green onions, thinly sliced
- 1+ tablespoon sesame seeds
For the dressing
- 1 tsp minced garlic
- 1/4 cup almond butter
- 2 tablespoons fresh lime juice
- 2 tablespoons tamari
- 3 tablespoons water
- 1/2 tablespoon pure maple syrup
- 1 tablespoon toasted sesame oil
- 2 teaspoons freshly grated ginger
- 2 tablespoons coconut aminos/soy sauce
Pour over all of the sliced vegetables, mix, and let 'marinade' for 30 minutes or more.
