Chipotle Slaw - Vegan


Ingredients: 
1 small head cabbage
1 medium red onion
1 large red bell pepper
15-20 baby carrots
1 cup black beans
Sauce: 
1 avocado
juice of 4 limes
2 tbsp apple cider vinegar
2 tbsp water
2 tbsp fresh cilantro
1 tsp salt
2 cloves garlic
1 tsp chipotle powder

Shred all veggies to slaw consistency. Mix in a large bowl, and add 1 cup black beans. 

In a food processor, combine the last 8 ingredients and puree until smooth. 

Mix the sauce with the veggies and refrigerate before serving.
