Raw Rainbow Pad Thai

Changes made below:

Ingredients:

  • 1 medium zucchini, julienned or spiraled
  • 2 large carrots, julienned or spiraled
  • 1 red pepper, thinly sliced
  • 2 cups thinly sliced red cabbage
  • 1 cup frozen edamame, thawed (*not Paleo)
  • 3 green onions, thinly sliced
  • 1+ tablespoon sesame seeds
For the dressing
  • 1 tsp minced garlic
  • 1/4 cup almond butter
  • 2 tablespoons fresh lime juice
  • 2 tablespoons tamari
  • 3 tablespoons water
  • 1/2 tablespoon pure maple syrup
  • 1 tablespoon toasted sesame oil
  • 2 teaspoons freshly grated ginger
  • 2 tablespoons coconut aminos/soy sauce
Combine the ingredients for the dressing in a small bowl and stir/whisk together.

Pour over all of the sliced vegetables, mix, and let 'marinade' for 30 minutes or more.
